Japanese Whiskey Penicillin

Ingredients
- Suntory Toki Whisky
- lemon juice
- ginger-honey syrup

One of my favorite whiskey cocktails, especially in the winter, is the Penicillin. I especially like the one they make at the Chicago bar, Billy Sunday. Here's a Penicillin riff using Japanese whisky, specifically Suntory Toki for it's lighter flavor profile.
The Recipe
- 2 oz. Suntory Toki Whisky
- ¾ oz lemon juice
- ¾ oz ginger-honey syrup
Combine all ingredients in a shaker, fill with ice, and shake until chilled. Once chilled, strain into a rocks glass over fresh ice. Garnish with candied ginger or lemon peel.
